Easy Peasy No Bake Granola Bar Recipe

I’m not going to write you a big long story you have to scroll through to get to the stinkin’ granola bar recipe… You’re welcome.

Ingredients

  • 1 cup Peanut Butter – Go as hippie dippie as you like, but we do recommend a creamy not a crunchy variety.
  • 2/3 (ish) cup Honey – We get all of our honeybee products from It’s All About Bees here locally
  • 1 teaspoon Vanilla Extract – We purchase from Exist Green here locally
  • 1/2 teaspoon (ish) Salt Also from Exist Green – they have so very many types of salt!
  • 2 1/3 cups Oats – Here’s where you can really go rogue! Whatever type of you prefer. We used quick oats because it’s what we had on hand, but it really doesn’t matter.
  • Chocolate Chips (to taste)Also from Exist Green

Directions

  1. In a large bowl, mix peanut butter, honey & vanilla until smooth and creamy
  2. Add salt (don’t worry about measuring super exactly just throw a lil spoonful of salt in there!)
  3. Add in the granola and mix until chunky
  4. Flatten into a casserole dish or baking sheet at desired thickness
  5. Chill (I skip this and eat them immediately sometimes. It’s fine. There are no rules.)

Notes:

I tried to cook a pizza once and wound up leaving my oven on for 3 days, that’s how bad I am at cooking – and even I can make these. They’re much softer than store bought granola bars so definitely leave them in the fridge. Or, look up a baked version if you so desire. But for a quick 5 minute recipe, these are cheap, tasty, and easy to source ingredients from local vendors.
